One Pot Mexican Pasta

One-pot can feed a crowd! This easy appetizing dinner dish is simple to make is packed with tex-mex flavor!
It’s totally customizable with the optional veggies. Sub beans for onions.
Add cauliflower instead of corn. Up to you! Can be used with ground turkey, chicken, sausage, or beef.
Add sriracha or red pepper flakes for a spicy kick.
Whether you are cooking for two or more adjust portions for meat, pasta, spices and veggies as desired.

 

* Ground beef or ground chicken or ground turkey or ground sausage
* 3 tbsp of butter

* 1/2 cup of salsa
* One 8oz can of tomato sauce
* 1-2 cups of Elbow macaroni
* 1 cup of corn
* 1 cup of diced tomatoes
* Beans (I used half a can)
* 1 avocado 
* 3-6 oz of sour cream (Between 1/4 of a cup - 1 cup)
* Mexican shredded cheese blend
(or any shredded cheese blend such as colby-jack, cheddar, or mozzerella)
*Sriracha, or hot sauce or red pepper flakes (OPTIONAL)


 

 

Total Prep Time: 20 minutes.

Total Cooking Time:  40 minutes.

INGREDIENTS

  1. Heat a saucepan on medium heat & add 2-3tbsp of butter.

  2. Brown meat halfway.

  3. Add ½ cup of salsa.

  4. Add one can of tomato sauce.

  5. Mix and increase heat to high.

  6. Add elbow macaroni.

  7. Simmer for 5 minutes or so.

  8. Dice an avocado.

  9. Add in veggies except the avocado:
    Corn, beans, tomato, whatever other veggies (like bell pepper or onion).

  10. Mix well.

  11. Add in hot sauce or red pepper flakes (OPTIONAL).

  12. Simmer until macaroni is fork tender.

  13. Generously sprinkle cheese on top.

  14. Remove from heat.

  15. Serve with sour cream & avocado on the side or directly on top!
