Olive Garden's Chicken Soup

YOU GUYS! I did it! I made a replica of Olive Garden's chicken soup without the gnocchi
(ditching the carbs for now) but the broth is a tasty match!

I AM SO EXCITED!! You don't even know! I always go to Olive Garden for the salad, soup, and breadsticks. Now I can make it all at home! It's easier on the budget.

The first time I made this my guy was at work and by the time he came home, I ate the whole pot. Oops. Well now I know what we're eating for the rest of the week, honey! 

* 2-3 Chicken Breasts

* 1 Celery stalk

* Sliced carrots

* 2 Tbsp of butter or garlic butter

* 2 tsp of minced garlic (or 2 cloves, minced)
* Olive oil

* 1-2 cups of chicken broth 

* Half a bag of baby spinach

* Onions, finely chopped.

* Grated or shredded cheese (optional)
* 3-5 oz heavy cream

 

 

Total Prep Time: 10 minutes

Total Cooking Time: 20 minutes

INGREDIENTS

  1. Chop celery & carrots.
    Mince garlic and onions.

  2. Chop chicken into small pieces.
    Season with salt and pepper.

  3. Add olive oil and butter to a pot, add in chicken.

  4. Add 2 tsp of minced garlic & the diced onions. Stir.

  5. Add in the celery and carrots.

  6. Pour in at least 1 cup of chicken broth.

  7. Pour in 3-5 ounces of heavy cream. Stir and let it simmer.

  8. Add in spinach and grate cheese (I used mozzerella and parmigiano-reggiano)

  9. Simmer and serve!

 

Note: Feel free to add pasta, gnocchi or even dumplings!
