Old Bay Chicken Stew

Although Old Bay seasoning is famed for its use in many seafood dishes, I experminted with meat from outside of the deep blue sea. The rice is optional and I love using different kinds, my grocery has spanish rice, broccoli rice, dirty rice, endless variety!

Anyhoo, I went to Walmart and found this canned okra, corn, and tomato blend.

So, I threw together a generous amount of seasoning, chicken and delicious veggies.

It was good. I mean not the best. But good. It actually made my blog. Can you believe it?
And no I'm not rating it highly because its my recipe!  ;)

* 3 chicken thighs

* Half an onion
* 1 celery stalk

* 1 tbsp minced garlic (or 2 cloves, minced)

* Okra, corn, and tomato canned blend (or use fresh)

* 1 tbsp of butter
* 2 cups of chicken broth
* Dried basil

* Old Bay seasoning

* Rice (any variety, dirty or long grain) OPTIONAL


 

Total Prep Time: 15 minutes.

Total Cooking Time:  45 minutes

INGREDIENTS

 

  1. Dice any veggies you need for prep including onion & celery (tomato if you're not using canned).

  2. Add in diced onion, 1 tbsp of butter, and garlic. Sautee' for a few minutes.

  3. Add your chicken thighs to a pot, then fill the pot with 2 cups of chicken broth.

  4. Boil on high until the chicken is tender.

  5. Either take out the chicken thighs and use two forks to shred them or just pull them apart in the pot.

  6. Add in rice (optional) and the rest of your veggies (okra, corn, tomato).

  7. Simmer, then add some basil and sprinkle your Old Bay seasoning generously.

  8. Simmer until rice & chicken is tender, then serve!
