Jambalaya Soup

Quick & delicious famous bowl from the south!

 

Total Prep Time: 20 minutes.

Total Cooking Time:  40 minutes.

INGREDIENTS

  1. Dice up the chicken into bite sized pieces.

  2. Chop up the celery, mince garlic, onion, & tomato, and green pepper.

  3. Go ahead and prepare dirty rice mix according to heating direction.

  4. While the rice cooks, set a saucepan on medium heat and cook the chicken in butter/oil.

  5. When there is little to no pink left in the chicken, stir in minced garlic, bell pepper, and onion.

  6. After sautéing the onion & bell pepper for a bit, add in diced tomato & celery.

  7. Add in any optional meat or veggies (shrimp, okra, etc.)

  8. Add 4 cups of chicken broth.

  9. Simmer for around 5 minutes then add: 1 tsp of cajun seasoning, chili powder & cayenne pepper.

  10. Stir & simmer until meat and veggis are tender.
     

  11. Serve over rice and garnish generously with a shredded cheese blend.

* Dirty rice mix (you can sub for long grain wild rice)
* 1 Chicken breast 

* Shrimp, peeled. (OPTIONAL)
* 4 cups of chicken broth
* Green and/or red bell pepper
* 1 celery stalk
* 1 tbsp of onion
* 2 cloves of garlic or 1/2 tbsp of minced garlic
* Shredded cheese (any cheese blend works, I have tried colby-jack & mexican blend)
* 1 tbsp of chili powder & cayenne pepper
* 1 tsp cajun seasoning 

* Okra (OPTIONAL)
* Peeled shrimp, diced ham, or any other meat you'd like to add (OPTIONAL)
