Hawaiian Pineapple Coconut Cake

This cake is perfect for when its cold and dreary outside. Enter your own tropical paradise when you bite into this delicious Hawaiian dessert! My hubby recently requested this as a birthday cake, and we added cherries and blueberries, hint of orange jello powder. It was a hit!

 


* 1 stick of butter
* 1 cup of sugar
* 1 1/2 cups of flour (or pineapple cake mix!!)
* 1 cup (or more) coconut flakes,
* 1/2 cup of pineapple chunks (drain juice from can)

* 1tsp ginger
* 3 eggs
* 1 tsp baking powder

 

Total Prep Time: 15 minutes.

Total Cooking Time: 1 hour.

INGREDIENTS

 Make sure your oven is clean!
I always forget to clean my oven, as it is not self-cleaning.

 

  1. Preheat oven to 350.

  2. Grease a loaf pan.

  3. Beat the eggs in a bowl, set aside.

  4. Place a stick of butter in a microwaveable mixing bowl & soften/melt (around 15 seconds).

  5. Cream 1 cup of sugar with the softened butter.

  6. Add into the bowl (in order!):
    Beat eggs
    1
    ½ cups of flour
    1/2 tsp of salt
    1 tsp of ginger, then mix
    1 cup of coconut flakes (or more, it won't effect the texture too much)

    1 cup of pineapple chunks (if you're using the canned kind, then do not drain the juice).
    and 1 tsp of baking powder.

  7. Mix all the ingredients thoroughly.

  8. It may seem a little thick, this is normal.

  9. Pour into a loaf pan.

  10. Bake for 35-40 minutes.

  11. Garnish with extra coconut flakes on top if you to make it look pretty :)

  12. Serve & devour. 

 

Note: You can also make this batter for cupcakes!

Just add one cherry or strawberry quarter in the middle of each cupcake tin,add batter, and bake!

Then you've got yourself some rooty tooty Hawaiian frooty cupcakes!
