Crowd-Pleasing Maple Chicken

HUBBY DELICIOUS METER: 10/10.
This is my go-to potluck chicken because I know it’s a crowd pleaser, uses only 6 ingredients, and takes under an hour to make! Not everyone likes red pepper flakes though,
so unless a spicy kick is alright to serve, opt out of it. You can use any vinegar to sub rice wine, it is just my preferred vinegar for this dish. Some regions/countries do not have maple syrup available either, so you can sub for honey or “fake” maple-flavored pancake syrup



* 1 tsp Brown sugar
* ½ cup of Dijon mustard
* ¼ cup of 100% maple syrup (substitute for pancake syrup or honey if needed)
* 1 tablespoon of rice wine vinegar (or subsitute for any vinegar you have on hand)
* Rosemary (or any leaf spice, basil goes well, too)
* Boneless chicken thighs (skin on is okay)
* Red pepper flakes (OPTIONAL)

* Lemon juice (OPTIONAL)

Total Prep Time: 15 Minutes

Total Cooking Time:  1 Hour

INGREDIENTS

1. Preheat oven to 350 degrees (180 C).

2. Grease a baking dish to fit the chicken thighs.
3. Place chicken thighs in the baking dish.
4. Season with salt/pepper
5. Season with rosemary (or parsley, basil, parsley, thyme whatever is on hand).
6. Combine: 1 teaspoon brown sugar, ½ cup of Dijon, ¼ maple syrup, and 1 tsp of vinegar and lemon juice.
7. Mix well.
8. Pour over chicken.
9. Pop in the oven for 30 minutes.
    If not cooked thoroughly then leave it in for another 10-15 minutes or until browned.
10. Sprinkle brown sugar & red pepper flakes (optional).


Cool & Serve!
