Crockpot Chicken Fajita Soup

This soup is a piquant blend of flavor from down south!
Salsa, fajita seasoning, and wholesome veggies such as corn, tomato, beans, onion, avocado
and whatever else you’d like to throw in there!
 

INGREDIENTS

 

* Chicken breast (1 per person)
* 1 tsp Fajita seasoning
* 1 tsp  of cumin
* 1/2 cup of salsa
* 4 oz of diced tomato (1/3 cup)
* Half an onion
* 1/3 cup of corn

* 1/3 cup of beans (any variety)
* 1 can cream of chicken
* 1 cup of chicken broth
* 2 tsp of lemon juice
* Parsley & cilantro (OPTIONAL)
* 1/3 cup of sour cream & 1 avocado (OPTIONAL)

 

Total Prep Time: 10-15 minutes.

Total Cooking Time:   4 ½  hours - 6 ½  hours

DIRECTIONS

  1. Dice tomato & onion .

  2. Spray the crockpot/slow cooker with cooking spray.

  3. Add chicken on the bottom of the pot, set on high.

  4. In a large mixing bowl mix together:
    1/2 cup of salsa
    1 cup of chicken broth,
    1 teaspoon of cumin
    1 teaspoon fajita seasoning
    1/2 tsp of lemon juice
    one can cream of chicken
    1/3 cup of corn
    1/3 cup diced tomato
    1/3 cup of beans
    Chopped onion
    Cilantro leaf (optional) 

  5. Mix & pour over the chicken.

  6. Set the slow cooker to high  for 4 hours (or low for 6 hours).

  7. After time is up, remove the chicken and shred it  with two forks.

  8. Then place it back into the slow cooker and top it with cheese & parsley.

  9. Once cheese has melted turn the crockpot off.
     

  10. Serve with sour cream & avocado on the side or directly in the soup!
