Crockpot Shredded QuinoaBeef Burritos

I love the strong flavors and the smell is amazing. Fire up the tortillas we're eatin burritos tonight!

* Tortillas

* Chuck roast

* Onion

* Salsa

* Enchilada sauce

* Corn

* Rotel

*Quinoa

*Burrito toppings: Cheese, avocado, sour cream, rice,etc.

 

Total Prep Time:  10 minutes

Total Cooking Time:  4 hours

INGREDIENTS

  1. In a pan, sear the meat with butter so both sides are brown.
    Only flip it once! This saves the juices.

  2. Chuck that in the crockpot on low, and throw the onions in the pan.

  3. Cook the onions for a bit then throw them on top of the beef.

  4. Add in enchilada sauce, salsa, corn, quinoa, and rotel.

  5. Set the crockpot to high for 4 hours, or on low for 6, stirring occasionally.

  6. Cook each tortilla in a pan.

  7. Spread the beef and toppings then roll it up!
