Vegetarian Collard Greens

Collard greens without the bacon grease. Makes a nutritious side dish.

*Collard Greens

* Tomatoes

* Onions

* Garlic

*Diced Tomatoes

* Vegetable Stock or Broth

 

Total Prep Time:  30 minutes

Total Cooking Time: 30 minutes

INGREDIENTS

  1. Fry the onions on low heat for 5 minutes.

  2. Add garlic and tomatoes.

  3. Add greens and vegetable stock.

  4. Cook until softened.

  5. Season with black pepper. (OPTIONAL)
