Chicken Pot Pie Soup

Chicken pot pie served up in a savory broth.
No baking required, equally as delicious!
* 2 cups of chicken broth
* Chicken breast (1 chicken breast = 2 people)
* Frozen mixed veggies (with peas, corn, carrots blend)
* 1 small potato
* 1 cup of heavy cream (or a small carton)
* 1 celery stalk
* Italian seasoning (or parsley, basil, oregano, thyme, rosemary)
* Lemon juice (around 2 tsp) or lemon skin grinds (OPTIONAL)
Total Prep Time: 15 minutes.
Total Cooking Time: 40 minutes.
INGREDIENTS

Finely chop up onion, celery, and potato.

Slice up chicken breast into bite sized pieces.

Melt 2 tbsp of butter in a saucepan.

Add in onion, carrots, and celery. Then sautee' for 3-5 minutes.

Pour in 2 cups of chicken broth, wait for it to start boiling.

Add in chopped potato, peas/carrots/corn mixed veggies.

Add in salt, pepper, and italian seasoning.

Add in 1 cup of heavy cream and 2 teaspoons of lemon juice.

Add chicken breast last.

Cover the pot with a lid until the broth begins to boil.

Allow the broth to boil until chicken cooks (around 15 minutes).

Serve with dipping bread or biscuits!
