Chicken Pot Pie Soup

Chicken pot pie served up in a savory broth.
No baking required, equally as delicious!

 

* 2 cups of chicken broth
* Chicken breast (1 chicken breast = 2 people)
* Frozen mixed veggies (with peas, corn, carrots blend)
* 1 small potato
* 1 cup of heavy cream (or a small carton)
* 1 celery stalk
* Italian seasoning (or parsley, basil, oregano, thyme, rosemary)
* Lemon juice (around 2 tsp) or lemon skin grinds (OPTIONAL)

 

 

Total Prep Time: 15 minutes.

Total Cooking Time:  40 minutes.

INGREDIENTS

  1. Finely chop up onion, celery, and potato.

  2. Slice up chicken breast into bite sized pieces.

  3. Melt 2 tbsp of butter in a saucepan.

  4. Add in onion, carrots, and celery. Then sautee' for 3-5 minutes.

  5. Pour in 2 cups of chicken broth, wait for it to start boiling.

  6. Add in chopped potato, peas/carrots/corn mixed veggies.

  7. Add in salt, pepper, and italian seasoning.

  8. Add in 1 cup of heavy cream and 2 teaspoons of lemon juice.

  9. Add chicken breast last.

  10. Cover the pot with a lid until the broth begins to boil.

  11. Allow the broth to boil until chicken cooks (around 15 minutes).

  12. Serve with dipping bread or biscuits!
