Chicken Enchilada Casserole

Great simple & quick recipe for any dinner night!

* Chicken breasts

* Enchilada Sauce (red)

* Shredded cheese

* Corn

* Salsa

* Avocado & Sour cream

 

Total Prep Time:  10 minutes

Total Cooking Time: 1 hour

INGREDIENTS

  1. Tenderize the chicken breasts.

  2. Poke/stab and pour enchilada sauce over breasts.

  3. Marinade for 1 hour (OPTIONAL)

  4. Add salsa and corn.

  5. Bake at 355 degrees for 45 minutes - 1 hour.

  6. Top with cheese and serve with avocado/sour cream when cheese has melted.
