Blueberry Lemon Cake

I love fruity cakes! I love blueberries. I love lemons. Put them together and I'm in heaven!

Complete with a simple yet delicious lemon glaze.

* Lemon zest

* Blueberries (Fresh or frozen)

* 1 ½ cups of sugar

* 1 stick of butter

* 1½ cups of flour

* 3 eggs

* 1 tsp baking powder

* 2 tablespoons of vanilla extract

* 1 Lemon

* 1 cup powdered sugar

* 1/3 cup of milk

Total Prep Time: 15 minutes

Total Cooking Time: 1 ½ hours

INGREDIENTS

  1. Have lemon zest and blueberries ready! 

  2. Preheat oven to 350 degrees and grease or line a loaf pan.

  3. Melt one stick of butter in a microwaveable mixing bowl.

  4. Add 1½ cups of sugar and cream it together.

  5. Crack in three eggs and 2 TBSP of vanilla extract.

  6. Mix well, then add 1 ½ cups of flour and 1 tsp baking powder.

  7. Add in 1/3 cup of milk, the blueberries, and lemon zest.

  8. Fold them in fast or they will sink, quickly pour the batter in the loaf pan!

  9. Bake for 50 minutes to 1 hour.

  10. While it is baking peel the lemon you used from the zest,
    Add half of it to a blender/processor along with 1 cup of powdered sugar.

  11. Glaze it over the cake when it is done and serve when cooled! Yummy!
