Beef Braised Stew w/
Mashed Potatoes

A country-style comfort food that will satisfy any meat & potato lover!
This can be made with red, russet, or golden potatoes. Whether you are cooking for two or more, adjust portions for meat, cheese, spices and veggies as desired.
I use two small potatoes per person.
You will also need either a dutch oven, cast-iron skillet or some kind of bakeable skillet/pan.
Mashed Potato
*Potatoes (1 large or 2 small per person)
* One stick of butter
* Cheddar cubes or grated/shredded cheddar
* 1 cup of milk
* 6oz of sour cream
* Salt
Total Prep Time: 40 minutes
Total Cooking Time: 1 ½ hours
INGREDIENTS
Braised Beef
* One onion
* 2 garlic cloves (or 2tsp minced)
* Mushrooms (1 cup fresh or 1 can)
* 6 oz can of tomato sauce
* 1 cup of beef broth
* Parsley, thyme, & rosemary
(or any preferred spices on hand)
Mashed Potato (First)

Slice potatoes (in cubes or in half).

Boil potatoes for 30ish minutes in salted water.

After potatoes are tender, drain pot accordingly.

Preheat oven to 350 degrees.

Add cheddar cubes (or shredded cheddar) to the potato pot
(or mixing bowl) & mash potatoes. -
Add 2 tbsp of butter.

Add 1 cup of milk.

Add Lots of salt.

Add half container of sour cream (around 3-6oz) Mash thoroughly.

Add 2 more tbsp of butter.

Add 1/4 of milk.
-
Add more salt.
-
Mash thoroughly.

Grease a baking dish.

Add mashed potatoes to the baking dish.

Cover with aluminum foil.
-
Bake for 20 minutes & add cheese blend on top.
Braised Beef Stew (Second)

Chop onions & mince garlic.
-
Add oil or butter to a saucepan.
-
Begin to brown the beef.
-
Sprinkle salt & pepper.
-
Add mushrooms & onion.
-
Add garlic.
-
Stir until there is little to no pink left in the beef.

Preheat oven to 350 (if it is not on already).

Stir in beef broth & tomato sauce.

Add a dash of parsley, thyme, and rosemary.
-
When sauce is thickened, bake for 20 minutes.
DIRECTIONS
Serve braised beef stew over the mashed potatoes in a bowl not a plate!
